This expresses how incredible dry Jurancon whites can taste be, using 50% Gros Manseng and 50% Petit Manseng grapes that are picked later than the others, they are then fermented in stainless steel tanks with indigenous yeast before being left to develop in old foudres and barriques for 12 months.
