Hacienda de Chihuahua, one of the top Sotol producers. Sotol is distilled from the Sotol plant - the Dasylirion wheeleri (desert spoon), only grown in Northern Mexico and Texan desert- the plants take 15 years to reach maturity, and it takes an entire plant to make just one bottle of sotol!
