Stewart’s Brewing – Highway 101 – West Coast IPA
Highway 101 is a traditional West Coast IPA. A crisp, clean malt base including chit, wheat and dextrin malts provides the perfect base for the big hitting US hops to shine. Big additions of west coast American hops to the boil and whirlpool give a big bitterness, backed up with refreshing resinous pine and tropical fruit notes. Copious amounts of the development hop HBC 431 and Amarillo are added to the dry hop which imparts big citrus and herbal flavours to this classic style.
Stewart Brewing quickly established itself as one of Scotland’s most successful and reputable breweries. Over the years, we have continued to innovate and develop, whilst upholding the traditional ethos of Edinburgh’s rich brewing history. A payroll, which consisted of just Jo and Steve Stewart, now supports over 30 employees who work across a range of departments, from retail to production.
We began with a line up of three cask ales. The next natural step was to produce a range of bottled beers and to extend our range of cask and keg brews to accommodate the more experimental drinker. That said, 2010 seemed to inundate us with restriction after restriction; our custom made 10-barrel brew house was, quite literally, full to the brim. We brewed around the clock at maximum capacity but couldn’t keep up with demand. This could only mean one thing; a brand new 50 hectolitre Bavarian brew kit being housed in a new custom-built brewery.
Beers and production aside, Stewart Brewing now has a fantastic, custom-built premises which is very much catered to the public. We have been focusing our efforts on getting as many feet through the doors as possible to see exactly what we do. There is no shortage of incredible facilities on-site at Stewart Brewing, including our experimental brew-it-yourself Craft Beer Kitchen (U.K’s first!); our 18 tap Growler Fill Station; or chilling out with a beer flight poured straight from the tank.
